WAAKYE

Waakye is one of the most popular dishes you can find in Ghana. It is made up of cooked rice and beans. The food can be eaten at any time of the day but most people will like to eat it for breakfast. The rice and beans are cooked together with red dried sorghum leaf sheaths. The sorghum leaf sheaths are then taken out before eaten. The sorghum leaf sheaths are responsible for flavor and the rice's unique reddish-brown color. The word waakye comes from shinkafa da wake in the Hausa language which means rice and beans. Waakye is very affordable and in Ghana, it is mostly sold by roadside vendors. It is preferably wrapped in leaves but can be wrapped in pack too. It is believed that the rice and beans present in the Caribbean and South America were brought there through slave trade.

Ingredients What goes well with waakye?

What you eat with waakye is up to you as long as you have your rice, beans and dried sorghum leaf sheath ready. But the following are what have been eaten with waakye since it was made by Ghanaians. Shito (Ghanaian hot pepper sauce made of dried fish), Egg, Spaghetti (which is called talia in Ghana), Meat, Gari, Wele (cooked cowhide), vegetable salad of cabbage, carrots, onions and tomatoes, fried fish and sometimes fried ripe plantain.

How to prepare Waakye
  1. Boil the Beans:
  2. Boil two cups of beans. Make sure it is semi cooked. Some people add limestone to the beans in order for it to cook faster.


  3. Dried sorghum leaves and rice
  4. Wash the dried sorghum leaf sheath and with three cups of rice, add it to the semi cooked beans. Add water to it and let it boil for about thirty-forty minutes.

    With your shito ready, you can boil your egg and spaghetti and your waakye is ready to be served

Nutritional Value

Waakye is very nutritious. The beans in it contain protein and the rice also contains carbohydrates. When waakye is wrapped in the leaves, it is beneficial to the body as the leaves contains antioxidants. Antioxidants protect the cells from damage and helps it to fight diseases like cancer, heart disease, cancer and more.
